Chez Evaristo surprised me the most. This bar was a lot more simple than the previous ones i visited, so I never thought I would find the best pincho I’ve ever eaten in Pamplona: and I did. This beautiful creation is the Robertico, a shellfish crepe with mushrooms and a creamy sauce. At first glance, I was not so sure about this pincho. Visually it wasn’t as appealing as the others pinchos I tried, but I know not to judge a book by its cover. Within the first bite, I new I found what I was looking for. I recorded my reaction in the video posted above, and to my surprise, my pincho partner agreed with my bold statement of this being the best pincho I have ever tired in Pamplona. I recommend everyone try the Robertico, and bless your mouths with this delicious pincho.
